BBQ Bacon Cheeseburger Mac

A hearty, one-skillet casserole that combines the flavors of a classic cheeseburger with BBQ sauce, crispy bacon, and macaroni in a creamy, cheesy sauce.

  • 1 lb ground beef
  • 1 medium onion, diced
  • 8 oz elbow macaroni
  • 1 1/2 cups water
  • 1/2 cup BBQ sauce
  • 2 tablespoons Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 8 slices bacon, cooked and crumbled (reserve a little for topping)
  • 2 cups shredded cheddar cheese, divided
  • 1 cup Velveeta cheese sauce (from a box or block, melted)
  • 1/2 cup milk (optional, for creamier texture)

Instructions

  1. In a large skillet over medium heat, brown the ground beef and diced onion until the beef is no longer pink and the onion is soft. Drain excess fat and return to the skillet.
  2. Add the macaroni, water, BBQ sauce, Worcestershire sauce, garlic powder, and black pepper. Bring to a boil, then reduce heat and simmer for 8–10 minutes, stirring occasionally, until macaroni is tender and most of the liquid is absorbed.
  3. Stir in the melted Velveeta cheese sauce, milk (if using), crumbled bacon (except reserved topping), and 1 1/2 cups of the shredded cheddar cheese until well combined and creamy.
  4. Remove from heat, pour into a greased baking dish, and top with the remaining 1/2 cup shredded cheddar and reserved bacon.
  5. Bake at 350°F for 5–7 minutes, just until the cheese on top is melted and bubbly. Let stand 5 minutes before serving to allow the sauce to thicken.

Notes

For a smokier flavor, use hickory or mesquite-style BBQ sauce. Substitute ground turkey or chicken for a lighter version. Leftovers reheat well in the microwave with a splash of milk to restore creaminess.
