For the Crust:
- 4 large russet potatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 tablespoons butter
- 1/2 cup sour cream
- 1/4 cup chopped chives
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Scrub the potatoes clean and pat them dry.
- Prick each potato several times with a fork. Rub the potatoes with olive oil and sprinkle with salt and pepper.
- Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until tender when pierced with a fork.
- Remove from the oven and let cool slightly. Slice open each potato and fluff the insides with a fork.
- Top with butter, sour cream, and chopped chives before serving.
