A simple and delicious baked potato with a crispy skin and fluffy interior, perfect as a side or main dish.

For the Crust:

  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 tablespoons butter
  • 1/2 cup sour cream
  • 1/4 cup chopped chives

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Scrub the potatoes clean and pat them dry.
  2. Prick each potato several times with a fork. Rub the potatoes with olive oil and sprinkle with salt and pepper.
  3. Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until tender when pierced with a fork.
  4. Remove from the oven and let cool slightly. Slice open each potato and fluff the insides with a fork.
  5. Top with butter, sour cream, and chopped chives before serving.

Notes
