For the Crust:
- 4 large russet potatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup sour cream
- 2 tablespoons butter
- 1/4 cup shredded cheddar cheese
- 2 tablespoons chopped chives
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Scrub potatoes clean and pat dry.
- Pierce potatoes several times with a fork. Rub with olive oil and sprinkle with salt and pepper.
- Place potatoes directly on oven rack and bake for 45-60 minutes until tender when pierced with a fork.
- Remove from oven and let cool slightly. Slice open each potato and fluff the insides with a fork.
- Top with butter, sour cream, cheddar cheese, and chives. Serve immediately.
