An indulgent, super cheesy baked macaroni and cheese with a creamy roux-based cheese sauce, perfect for comfort food lovers.

Ingredients

Scale
  • 6 tablespoons butter
  • 6 tablespoons all-purpose flour
  • 1/4 teaspoon mustard powder
  • 3 1/2 cups whole milk
  • 5 cups shredded cheese (a mix of cheddar and other cheeses preferred)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pound elbow macaroni, cooked and drained
  • 1/2 cup breadcrumbs (optional, for topping)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cook elbow macaroni according to package instructions until al dente. Drain and set aside.
  3. In a large saucepan, melt butter over medium heat.
  4. Whisk in flour and cook, stirring constantly, for about 3-4 minutes until smooth and the raw flour taste is gone.
  5. Add mustard powder and slowly whisk in whole milk, continuing to whisk until the sauce thickens and is smooth.
  6. Remove from heat and stir in shredded cheese until melted and creamy.
  7. Season the cheese sauce with salt and black pepper.
  8. Combine the cooked macaroni with the cheese sauce and mix well.
  9. Pour the mixture into a greased baking dish.
  10. If desired, sprinkle breadcrumbs evenly over the top for a crunchy crust.
  11. Bake in the preheated oven for 25-30 minutes until bubbly and golden on top.
  12. Let cool slightly before serving.

Notes

Using a mix of cheeses enhances flavor complexity. For extra creaminess, substitute some milk with heavy cream or half-and-half. Breadcrumb topping adds a pleasant crunch but can be omitted for a softer texture.
