Baked Lemon Herb Cod

A simple and flavorful baked cod recipe featuring fresh lemon juice, garlic, and herbs for a light and healthy meal.

  • 4 cod fillets (6 ounces each)
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried parsley
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Lemon slices, for garnish
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the cod fillets in a baking dish.
  3. In a small bowl, whisk together olive oil, lemon juice, minced garlic, parsley, thyme, salt, and pepper.
  4. Pour the lemon herb mixture evenly over the cod fillets.
  5. Bake in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork.
  6. Garnish with lemon slices and chopped fresh parsley before serving.

Notes

Do not overcook the cod to avoid a dry texture; baking time may vary depending on fillet thickness. Fresh herbs can be substituted for dried for a brighter flavor.
