Bacon Guacamole Grilled Cheese Sandwich

A delicious twist on the classic grilled cheese sandwich, featuring crispy bacon and creamy guacamole for an irresistible flavor combination.

For the Crust:

  • 4 slices of bread (sourdough or your favorite type)
  • 4 slices of cheddar cheese
  • 6 slices of bacon, cooked until crispy
  • 1 ripe avocado
  • 1 tablespoon lime juice
  • 1 small tomato, diced
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons fresh cilantro, chopped
  • Salt and pepper to taste
  • 2 tablespoons butter, softened

Instructions

1. Prepare the Crust:

  1. In a bowl, mash the avocado with lime juice, then stir in diced tomato, red onion, cilantro, salt, and pepper to make the guacamole.
  2. Butter one side of each slice of bread.
  3. Place a slice of cheese on the unbuttered side of two bread slices.
  4. Spread a generous layer of guacamole over the cheese, then top with crispy bacon slices.
  5. Add another slice of cheese on top of the bacon, then cover with the remaining bread slices, buttered side facing out.
  6. Heat a skillet over medium heat and cook the sandwiches for 3-4 minutes per side, or until the bread is golden brown and the cheese is melted.
  7. Slice in half and serve warm.
