A delicious twist on the classic grilled cheese sandwich, featuring crispy bacon and creamy guacamole for an irresistible flavor combination.

For the Crust:
- 4 slices of bread (sourdough or your favorite type)
- 4 slices of cheddar cheese
- 6 slices of bacon, cooked until crispy
- 1 ripe avocado
- 1 tablespoon lime juice
- 1 small tomato, diced
- 1/4 cup red onion, finely chopped
- 2 tablespoons fresh cilantro, chopped
- Salt and pepper to taste
- 2 tablespoons butter, softened
Instructions
1. Prepare the Crust:
- In a bowl, mash the avocado with lime juice, then stir in diced tomato, red onion, cilantro, salt, and pepper to make the guacamole.
- Butter one side of each slice of bread.
- Place a slice of cheese on the unbuttered side of two bread slices.
- Spread a generous layer of guacamole over the cheese, then top with crispy bacon slices.
- Add another slice of cheese on top of the bacon, then cover with the remaining bread slices, buttered side facing out.
- Heat a skillet over medium heat and cook the sandwiches for 3-4 minutes per side, or until the bread is golden brown and the cheese is melted.
- Slice in half and serve warm.
