A delicious twist on the classic grilled cheese sandwich with crispy bacon and creamy guacamole.

For the Crust:
- 4 slices of bread
- 4 slices of cheddar cheese
- 6 strips of bacon, cooked crispy
- 1 ripe avocado
- 1 small lime, juiced
- 1/4 cup diced red onion
- 1/4 cup chopped cilantro
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons butter
Instructions
1. Prepare the Crust:
- In a bowl, mash the avocado with lime juice, red onion, cilantro, salt, and pepper to make the guacamole.
- Butter one side of each bread slice.
- Place two slices of bread, buttered side down, on a skillet over medium heat.
- Layer each with a slice of cheese, half of the bacon, a generous spread of guacamole, another slice of cheese, and the remaining bread, buttered side up.
- Cook until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.
- Slice in half and serve warm.
