A delicious twist on the classic grilled cheese sandwich with crispy bacon and creamy guacamole.

For the Crust:
- 4 slices of bread
- 4 slices of cheddar cheese
- 6 strips of bacon, cooked crispy
- 1 ripe avocado
- 1 small tomato, diced
- 1/4 red onion, finely chopped
- 1 lime, juiced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons butter
Instructions
1. Prepare the Crust:
- In a bowl, mash the avocado and mix with diced tomato, red onion, lime juice, salt, and pepper to make the guacamole.
- Butter one side of each bread slice.
- Place a slice of cheese on the unbuttered side of two bread slices.
- Spread a generous layer of guacamole over the cheese.
- Top with crispy bacon strips and the remaining cheese slices.
- Close the sandwiches with the remaining bread slices, buttered side out.
- Heat a skillet over medium heat and cook the sandwiches for 3-4 minutes per side, until golden brown and the cheese is melted.
