A delicious twist on the classic grilled cheese sandwich, featuring crispy bacon and creamy guacamole.

For the Crust:
- 4 slices of bread
- 4 slices of cheddar cheese
- 6 strips of bacon, cooked crispy
- 1 ripe avocado
- 1 small lime, juiced
- 1/4 cup diced red onion
- 1/4 cup chopped cilantro
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons butter
Instructions
1. Prepare the Crust:
- In a bowl, mash the avocado with lime juice, red onion, cilantro, salt, and pepper to make the guacamole.
- Butter one side of each slice of bread.
- Place a slice of cheese on the unbuttered side of two slices of bread.
- Spread guacamole over the cheese, then top with crispy bacon strips.
- Add another slice of cheese on top of the bacon, then cover with the remaining bread slices, buttered side out.
- Heat a skillet over medium heat and cook each sandwich for 3-4 minutes per side, until golden brown and the cheese is melted.
