A delicious twist on the classic grilled cheese sandwich, featuring crispy bacon and creamy guacamole.

For the Crust:
- 4 slices of bread
- 4 slices of cheddar cheese
- 6 slices of bacon, cooked crispy
- 1 ripe avocado
- 1 small tomato, diced
- 1/4 red onion, finely chopped
- 1 lime, juiced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons butter, softened
Instructions
1. Prepare the Crust:
- In a bowl, mash the avocado with lime juice, salt, and pepper. Stir in diced tomato and red onion to make guacamole.
- Butter one side of each bread slice.
- Place a slice of cheese on the unbuttered side of two bread slices.
- Spread guacamole on top of the cheese, then add crispy bacon slices.
- Top with another slice of cheese and the remaining bread slices, buttered side out.
- Heat a skillet over medium heat. Cook sandwiches for 3-4 minutes per side until golden brown and cheese is melted.
