Bacon Cheeseburger Pockets

These Bacon Cheeseburger Pockets are a fun, easy weeknight meal that combines savory ground beef, crispy bacon, melted cheese, and onions all wrapped in pizza dough pockets. Perfect for kids and adults alike, they’re freezer-friendly and quick to bake.

  • 1 tube refrigerated pizza crust or pizza dough
  • 1/2 pound ground beef
  • 4 slices bacon, chopped
  • 1/2 small onion, diced
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • 1/4 cup ketchup
  • 1 tablespoon mustard
  • Olive oil or cooking spray for baking sheet

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, cook ground beef, bacon, and diced onion over medium heat until beef is browned and bacon is crisp; drain excess fat.
  3. Add ketchup, mustard, salt, and pepper to the mixture and stir to combine.
  4. Remove from heat and stir in shredded cheddar cheese until melted and well mixed.
  5. Roll out the pizza dough onto a lightly floured surface and cut into 6-8 equal rectangles.
  6. Place a generous spoonful of the beef and cheese mixture onto one half of each dough rectangle.
  7. Fold the dough over to form pockets and pinch edges together to seal completely.
  8. Place pockets on a greased or parchment-lined baking sheet, brush tops lightly with olive oil.
  9. Bake for 15-20 minutes or until golden brown and cooked through.
  10. Remove from oven and let cool for a few minutes before serving.

Notes

1. These pockets can be prepared ahead of time and baked when needed. 2. They freeze well; for freezing, wrap tightly and reheat from frozen at 350°F for about 20 minutes. 3. Serve with ketchup, mustard, mayo, or sour cream-based dips.
