Avocado Mozzarella and Tomato Grilled Cheese

A fresh and gooey grilled cheese sandwich featuring sliced avocado, mozzarella cheese, and cherry tomatoes, grilled to a golden crisp in under 10 minutes.

Ingredients

  • 1/2 avocado, sliced
  • 4 slices mozzarella cheese
  • 4 cherry tomatoes, halved
  • 2 slices multigrain bread (such as Ezekiel or sprouted grain)
  • Butter, for spreading

Instructions

  1. Butter the outside layers of both slices of bread.
  2. Heat a skillet over medium heat. Place one slice, butter-side down, into the pan.
  3. Layer mozzarella cheese, halved cherry tomatoes, and sliced avocado on top of the bread in the pan.
  4. Cover with the second bread slice, buttered side up.
  5. Cook until the bottom slice is golden brown, then carefully flip the sandwich.
  6. Cook until the other side is golden and the cheese has melted.
  7. Remove from pan, slice if desired, and serve immediately.

Notes

Use ripe avocado for creaminess; cherry tomatoes add a juicy burst of flavor. Multigrain bread provides a hearty texture and flavor contrast. For best results, cook on medium heat to melt cheese without burning the bread.
