A healthy and refreshing chicken salad with creamy avocado, wrapped in crisp lettuce leaves.

For the Crust:

  • 2 cups cooked chicken, shredded
  • 1 ripe avocado, mashed
  • 1/4 cup Greek yogurt
  • 1/2 cup diced celery
  • 1/4 cup diced red onion
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 large lettuce leaves (such as romaine or butter lettuce)

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine the shredded chicken, mashed avocado, Greek yogurt, celery, red onion, lime juice, salt, and black pepper. Mix well.
  2. Taste and adjust seasonings if needed.
  3. Spoon the chicken salad mixture onto the lettuce leaves, dividing evenly. Serve immediately.
