Bacon Blue Cheese Asparagus

This bacon and blue cheese asparagus comes together in less than 30 minutes. A healthy-but-decadent spring side dish perfect for holidays, date night, or barbecues.[1]

Ingredients

  • 1 pound fresh asparagus, trimmed
  • 6 slices bacon, chopped
  • 1/2 cup blue cheese crumbles
  • 1 tablespoon olive oil
  • 1 teaspoon granulated garlic
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F or prepare grill to 325°F. Toss asparagus with olive oil, granulated garlic, salt, and pepper. Spread in a single layer in a cast iron skillet or baking dish.[1]
  2. Scatter chopped bacon over asparagus. Bake or grill for 20-25 minutes until bacon is crispy and asparagus is tender, stirring halfway.[1]
  3. Remove from heat, sprinkle blue cheese crumbles on top, and let melt for 2-3 minutes. Serve immediately.[1]

Notes

Use thin asparagus spears for even cooking. For extra crispiness, broil for the last 1-2 minutes. Pairs well with grilled meats or pork.[1]
