Apple Spinach Salad with Feta, Pistachios, and Honey-Mustard Lemon Dressing

A refreshing salad featuring fresh baby spinach, sliced apples, crumbled feta cheese, and pistachios, dressed with a simple homemade honey-mustard lemon vinaigrette made from olive oil, Dijon mustard, honey, and lemon juice.

  • ¼ cup extra virgin olive oil
  • 2 tablespoons Dijon mustard
  • 3 tablespoons honey
  • 3 tablespoons freshly squeezed lemon juice
  • 5 oz fresh baby spinach
  • 1 large apple, cored and sliced (Fuji or Honey Crisp)
  • 4 oz feta cheese, crumbled
  • ⅓ cup pistachios, shelled

Instructions

  1. Make the salad dressing: Combine ¼ cup extra virgin olive oil, 2 tablespoons Dijon mustard, 3 tablespoons honey, and 3 tablespoons freshly squeezed lemon juice in a mason jar. Whisk well with a fork for 1-2 minutes until emulsified. Adjust honey or mustard to taste.
  2. Prepare the salad: In a large serving bowl (or 4 individual bowls), combine 5 oz fresh baby spinach, 1 large cored and sliced apple, and 4 oz crumbled feta cheese.
  3. Assemble: Add the salad dressing to the bowl(s) and toss to combine. Top with ⅓ cup shelled pistachios and serve immediately.

Notes

Slice apples just before serving to prevent browning, or toss slices in lemon juice. For make-ahead, store prepped ingredients separately in the fridge and assemble when ready. Substitute maple syrup for honey or lime juice for lemon if preferred.
