Apple Coffee Cake

Description

A moist and tender coffee cake swirled with cinnamon-spiced apples and topped with a crunchy streusel.

For the Crust:

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup sour cream
  • 2 medium apples, peeled and diced
  • 1/4 cup brown sugar
  • 1 tsp ground cinnamon
  • 1/4 cup chopped walnuts (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9-inch square baking pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream butter and granulated sugar until light. Beat in eggs one at a time, then vanilla. Stir in sour cream.
  4. Gradually mix dry ingredients into wet until just combined. Fold in diced apples.
  5. In a small bowl, mix brown sugar, cinnamon, and walnuts (if using). Sprinkle half over batter, swirl gently, then top with remaining mixture.
  6. Bake for 30-35 minutes, until a toothpick inserted comes out clean. Cool before serving.

Notes

You can customize the seasonings to taste.
