Angel Biscuits

Description

Light and fluffy biscuits that combine the ease of baking powder with the tenderness of yeast.


Ingredients

For the Crust:

  • 5 cups all-purpose flour
  • 1/4 cup sugar
  • 3 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 package (1/4 oz) active dry yeast
  • 1/2 cup warm water (110°F)
  • 1 cup shortening
  • 2 cups buttermilk

Instructions

1. Prepare the Crust:

  1. Dissolve yeast in warm water and let stand for 5 minutes until foamy.
  2. In a large bowl, combine flour, sugar, baking powder, baking soda, and salt.
  3. Cut in shortening until mixture resembles coarse crumbs.
  4. Stir in buttermilk and yeast mixture until just combined.
  5. Turn dough onto a floured surface and knead lightly 3-4 times.
  6. Roll dough to 1/2-inch thickness and cut with a 2-1/2 inch biscuit cutter.
  7. Place on greased baking sheets and let rise in a warm place for 30 minutes.
  8. Bake at 400°F for 12-15 minutes or until golden brown.

Notes

You can customize the seasonings to taste.
