Alabama White Sauce

A tangy, peppery mayonnaise-based barbecue sauce originating from North Alabama, traditionally served with smoked chicken.

  • 1.5 cups mayonnaise
  • 2/3 cup apple cider vinegar
  • 2 tablespoons coarse black pepper
  • 1/2 teaspoon salt
  • 2 teaspoons mustard powder
  • 1 teaspoon cayenne pepper

Instructions

  1. In a bowl, combine mayonnaise, apple cider vinegar, coarse black pepper, salt, mustard powder, and cayenne pepper.
  2. Whisk until smooth and all seasonings are well incorporated.
  3. Refrigerate the sauce overnight to allow flavors to blend.

Notes

This sauce is best made ahead and chilled overnight. It can be used as a dipping sauce or brushed on smoked chicken during the last 30 minutes of cooking.
