Air Fryer Pumpkin French Toast

Fluffy pumpkin French toast made in the air fryer for a quick and delicious fall breakfast. Thick brioche soaked in spiced pumpkin custard and cooked to golden perfection with minimal oil.

  • 4 large eggs
  • 1/2 cup pumpkin puree (not pumpkin pie filling)
  • 1/2 cup milk (dairy or non-dairy)
  • 2 tablespoons granulated sugar (or maple syrup)
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • 8 slices thick brioche bread (day-old works best)
  • 1 tablespoon butter, melted (for brushing bread, optional)
  • Maple syrup and powdered sugar, for serving

Instructions

  1. In a large bowl, whisk together eggs, pumpkin puree, milk, sugar, pumpkin pie spice, and vanilla extract until smooth.
  2. Dip each slice of brioche bread into the pumpkin mixture, coating both sides evenly. Let excess drip off.
  3. Brush both sides of each soaked bread slice lightly with melted butter (optional).
  4. Preheat air fryer to 350°F (175°C). Place bread slices in the air fryer basket in a single layer, not touching.
  5. Air fry for 5-6 minutes, flip, and cook for another 4-5 minutes until golden brown and cooked through.
  6. Serve warm with maple syrup and a dusting of powdered sugar.

Notes

For best results, use thick, slightly stale bread to prevent sogginess. Adjust sugar and spices to taste. Leftovers can be stored in the fridge and reheated in the air fryer.
